Mexican Foods
Mexican cuisine as it exists today is a fusion of the cooking of Mexico’s indigenous peoples (the Aztecs and the Mayans) and that of the Spanish. Prior to the conquistadors’ arrival in the 1500s, Mexico’s natives used ingredients that were available to them, including corn, tomatoes, avocados, chiles, beans, squash, poultry, fowl, seafood, and chocolate. The corn tortilla, the foundation of modern Mexican food, has been around for thousands of years. When the Spanish came, they brought ingredients of their own, such as rice, wheat, onions, garlic, cheese, beef, pork, chicken, and sugar. The resulting synthesis yielded a unique and delicious cuisine that is among the most popular in the world.
